Place the grains into a large microwave-safe bowl. Gently flake the fish into the bowl, being careful not to break it up too much.
Stir in the curry powder and mix everything together, then layer the spinach on top.
Cover the bowl with non-PVC cling film and microwave on high for 3 minutes, or until the spinach has wilted and darkened, and the grains are steaming hot.
While the grains are cooking, heat a medium frying pan over high heat and drizzle in 1 tablespoon of oil. Once it starts to shimmer, crack the eggs into the pan, one at a time. Fry the eggs until the edges are crispy, but the yolks remain soft, adding a pinch of chili powder near the end to enhance the color.
Once the grains are ready, fold the spinach through, then divide the mixture onto plates. Top each serving with a fried egg and a drizzle of your favorite green hot sauce for an extra kick.
