Jamie Oliver Stuffed apples & custard Recipe

Equipment

  • Tefal single (4.2 litres) or dual (8.3 litres) air fryer

Ingredients
  

  • 4 small eating apples
  • 25g mixed dried fruit
  • 25g stem ginger balls in syrup
  • 25g flaked almonds
  • 25g demerara sugar
  • 1 pinch of ground cinnamon
  • 50g soft unsalted butter
  • 4 small slices of fruit bread or brioche
  • 1 x 400g tin of custard

Instructions
 

  • Keep each apple intact. With an apple corer or a sharp knife, remove the center of the fruit and discard it. Next, use the knife’s tip to carefully score around the apple’s midsection a few times, making sure to cut nearly as deep as the core.
  • Mince the dried fruit and ginger into small pieces and place them in a bowl. Add the almonds, sugar, cinnamon, and butter. Using clean hands, squeeze and mix the ingredients until they form a cohesive filling. Stuff the mixture into the apples’ hollowed centers, setting aside any extra.
  • Arrange slices of fruit bread in a single layer inside your air-fryer drawer, and place each stuffed apple on top of a slice. Air-fry for about 15 minutes at 160°C.
  • Spoon any remaining filling on top of the apples. Continue air-frying for another 10 minutes at 160°C, or until the apples are tender and lightly browned. Serve warm or cold with creamy custard, and enjoy!
