Method
Prepare the Kebabs
- In a large bowl, combine the minced meat, chopped onion, minced garlic, ground cumin, ground coriander, paprika, salt, and pepper.
- Mix thoroughly until all ingredients are well incorporated.
- Divide the mixture into equal portions and mold each around a skewer, shaping them into long, oval kebabs.
- Brush lightly with olive oil and set aside.
Prepare the Flatbreads
- In a large mixing bowl, combine the self-raising flour, baking powder, and a pinch of salt.
- Add the yogurt and mix until a dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth.
- Divide the dough into 8 equal pieces and roll each into a ball. Using a rolling pin, roll each ball into a flat circle about 20cm in diameter. Heat a little olive oil in a non-stick frying pan over medium heat. Cook each flatbread for 1-2 minutes on each side until golden and puffed. Keep the cooked flatbreads warm by covering them with a clean tea towel.
Prepare the Salad
- In a bowl, combine the diced cucumber, tomatoes, chopped red onion, and parsley. Drizzle with lemon juice, season with salt and pepper, and toss to combine.
Prepare the Yogurt Sauce
- In a bowl, mix together the natural yogurt, tahini (if using), lemon juice, minced garlic, salt, and pepper until smooth.
Grill the Kebabs
- Preheat a griddle pan or barbecue to medium-high heat. Grill the kebabs for 4-5 minutes on each side, or until cooked to your liking.
Assemble the Dish
- Serve the grilled kebabs alongside the warm flatbreads. Top with the fresh salad and drizzle with the yogurt sauce. Garnish with additional parsley if desired.
