Homemade Kebabs & Flatbreads Recipe by Jamie Oliver

Ingredients
  

For the Kebabs
  • 500g minced lamb or beef
  • 1 onion, finely chopped​
  • 2 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for grilling
For the Flatbreads
  • 500g self-raising flour
  • 1 teaspoon baking powder
  • 200g natural yogurt
  • A pinch of salt
  • Olive oil for cooking
For the Salad
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, finely chopped
  • A handful of fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
For the Yogurt Sauce
  • 200g natural yogurt
  • 1 tablespoon tahini (optional)
  • Juice of half a lemon
  • 1 garlic clove, minced
  • Salt and pepper to taste

Method
 

Prepare the Kebabs
  1. In a large bowl, combine the minced meat, chopped onion, minced garlic, ground cumin, ground coriander, paprika, salt, and pepper.
  2. Mix thoroughly until all ingredients are well incorporated.​
  3. Divide the mixture into equal portions and mold each around a skewer, shaping them into long, oval kebabs.​
  4. Brush lightly with olive oil and set aside.
Prepare the Flatbreads
  1. In a large mixing bowl, combine the self-raising flour, baking powder, and a pinch of salt.​
  2. Add the yogurt and mix until a dough forms.​
  3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth.​
  4. Divide the dough into 8 equal pieces and roll each into a ball.​ Using a rolling pin, roll each ball into a flat circle about 20cm in diameter.​ Heat a little olive oil in a non-stick frying pan over medium heat.​ Cook each flatbread for 1-2 minutes on each side until golden and puffed.​ Keep the cooked flatbreads warm by covering them with a clean tea towel.
Prepare the Salad
  1. In a bowl, combine the diced cucumber, tomatoes, chopped red onion, and parsley.​ Drizzle with lemon juice, season with salt and pepper, and toss to combine.
Prepare the Yogurt Sauce
  1. In a bowl, mix together the natural yogurt, tahini (if using), lemon juice, minced garlic, salt, and pepper until smooth.
Grill the Kebabs
  1. Preheat a griddle pan or barbecue to medium-high heat.​ Grill the kebabs for 4-5 minutes on each side, or until cooked to your liking.
Assemble the Dish
  1. Serve the grilled kebabs alongside the warm flatbreads.​ Top with the fresh salad and drizzle with the yogurt sauce.​ Garnish with additional parsley if desired.
