  • Using a sharp knife, make shallow cuts on the fat of the pork chops, spacing them about 1cm apart. This will prevent them from curling up during cooking. Season the chops generously with sea salt.
  • Heat a large frying pan over medium-high heat and add ½ tablespoon of oil. Once the pan is hot, place the pork chops in and cook for about 2 minutes on each side, or until they turn golden and crispy, and are nearly cooked through—cooking time may vary depending on the thickness of the chops.
  • While the pork chops are cooking, place the grains in a large bowl, top with watercress, and cover with non-PVC cling film. Microwave on high for 3 minutes, or until the watercress has wilted and the grains are hot throughout.
